Sur la Table Spring Cupcakes

We had a great class this past weekend with a menu of Spring cupcakes.  All the cupcakes tasted great but what I loved about this class was the added focus on decorating using edible flowers and fondant.  Such great techniques to use on cakes for Mother’s Day and the coming wedding season.

Peas & Carrots Cupcakes

These cupcakes are perfect to make this time of year.  They fit right in for a bunny-themed Easter party, Earth Day, or Spring Garden party, as shown in the Hello Cupcake book, where the peas and carrots are part of a garden plot along with cute radish and lettuce cupcakes.

This is a good beginner cupcake because it’s a lot of  molding and rolling with fruit chews.  It doesn’t require as much of a steady hand for little details.

Baby Chick Cupcakes

The warm weather has only just started to settle in so it’s been strange to mentally think Spring.  I realized Easter is next week after seeing Target’s four aisles of goodies. (The Nestle eggs mix with Crunch and Butterfinger is the best).  To get in the Easter spirit, I made these adorable chick cupcakes by Martha Stewart but with a Hello Cupcake twist, just to make it easier on myself.

Meyer Lemon Cheesecake Bars

One of the ingredients I look forward to using when in  its in season is Meyer lemon.  I love that every part of it can be used – zest, peel, juice.  Meyer lemon is not as tart as lemons you find year round which make them perfect for baking.  These bars would be great for Mother’s Day.  Not too sweet and not too rich.  Just enough to not make you feel guilty for having some.

Easter Brunch: Mini Frittatas

My favorite meal of the day: Brunch. I don’t feel guilty about having a nice hearty meal. It is after all, two meals combined in one.  This recipe for Mini Frittatas from Giada de Laurentiis is great. It’s really versatile. In fact you could build a fixings bar and let everyone sprinkle in the ingredients they want in the frittatas before baking them off.

Just a note, I used a regular cupcake/muffin size pan.  Giada used a mini muffin pan to get bite-sized frittatas.

Easter Cupcakes

The minute I saw this I was in love.  The egg carton is adorable and clever.  I really am a fan of the Magnolia Bakery style of cupcakes. The way the frosting is swirled is so perfect but still homemade looking.  Their pale pastel frosting colors are perfect for Easter.

All things Green

I love Spring.   Everything is so much cheerier with all the greenery.  Though the color Green seems to be making an even bigger statement in our everday lives (eco-friendly, sustainable, reusable, etc) and pop culture- the green scarf (Confessions of a Shopaholic) and green girl (Wicked musical).

So here are a few notable favorites to celebrate the color green, living green, and of course, eating green.

Homemade Thin Mints

Always wished I were a girl scout when I was younger, so I guess this is as close as I can get.  I’ve used a recipe off of Baking Bites, which also has recipes for Samoas, Do-Si-Dos, and Tagalongs.  Thin Mints are my favorite though.

I like that this recipe is its a slice and bake.  The hardest part would just be making sure you cut the slices straight so its an even cookie.
